Every dumpling is folded by hand, nine pleats at a time.

Nine Pleats is a family-run dumpling house in Unionville, Markham. Come in and eat, or call ahead for takeout.

Open Tuesday to Sunday 11:30 a.m. to 9 p.m., Friday and Saturday to 10 p.m.

How a soup dumpling is made here

  1. We fill each wrapper with pork, ginger and chilled stock, then close it with nine pleats.

  2. It steams for twelve minutes, and the stock melts into soup.

  3. Lift it gently and dip it in black vinegar with fresh ginger.

dumplings folded by hand so far this week, and counting

Helen Zhou learned to fold from her mother in Harbin, with nine pleats on every dumpling. Most soup dumplings get more, but her mother always said nine is enough to hold the soup.

Our folding table sits behind a glass wall in the dining room, so you can watch the next batch being made while you eat. Helen’s son Kevin pulls the noodles to order, and her husband Wei runs the steamers. On most days at least three of us are at the table by eight in the morning.

  • 9pleats on every dumpling we fold

What people say after the last one

Average rating 4.8 out of 5 from the five reviews below.

  • The soup dumplings are as good as the ones I grew up with in Shanghai. Ask for a table by the glass so you can watch them being folded.

    Mei L., Unionville
  • We buy a frozen bag of pork and chive every couple of weeks. They cook from frozen in about seven minutes, and our kids fight over the last few.

    Jordan P., Stouffville
  • Great potstickers and very friendly service. It gets busy on Friday nights, so expect a short wait for a table.

    Anita R., Richmond Hill
  • We booked a round table for my dad’s 70th. There were twelve of us, the lazy susan never stopped turning, and they brought out longevity buns at the end.

    Raymond T., Markham
  • The beef noodle soup is worth the drive up from the city. You can watch the noodles being pulled while you wait.

Questions we get at the counter

Something else? Call (905) 555-0138 and whoever is at the counter will help.

Do you have vegetarian options?

Yes. The spinach and mushroom dumplings and the smashed cucumber salad are vegan, and the scallion pancake is vegetarian. We fold the vegetable dumplings on their own board, but they’re cooked in the same kitchen as everything else.

Is anything on the menu gluten-free?

Very little, because our wrappers, noodles and pancakes are all made with wheat flour. The smashed cucumber salad can be made with gluten-free tamari if you ask. There’s flour everywhere in our kitchen, so we can’t promise anything is safe for someone with celiac disease.

Where can I park?

There’s a free lot behind the building and more free parking on the side streets nearby. On Friday and Saturday evenings the lot is usually full by 6:30, so give yourself a few extra minutes.

Can you seat a large group?

Yes. Our two round tables seat up to 12 people each, and both have a lazy susan in the middle. Call (905) 555-0138 at least two days ahead to book one. We don’t take bookings for smaller tables, so just come in.

Can I buy frozen dumplings to take home?

Yes. Pork and chive, spinach and mushroom, and shrimp dumplings come frozen in bags of 50 from the freezer by the counter, starting at $32 a bag. Boil them from frozen for about 7 minutes, until they float and puff up.

How long does a takeout order take?

Most orders are ready in about 20 minutes. Soup dumplings lose their soup if they sit too long, so we suggest eating those here.
